Hi there! My name is Nancy, and I confess to having a bit of a cookie-cutter obsession. It’s true! Every time I browse the baking aisle, I find myself drawn to those charming little shapes, often leaving with one, two, or even more new additions to my collection. Last year, I couldn’t resist picking up a lovely set of spring-themed cookie cutters. This year, as my sister Laurie and I brainstormed ideas for Easter treats, I knew exactly how I wanted to put them to use.
Laurie, with her culinary flair, whipped up a batch of our tried-and-true Rice Krispie treats, and together, we brought these Springtime Rice Krispie Treats Dipped in White Chocolate to life. They were an absolute sensation at our Easter gathering, but their charm isn’t limited to just one holiday. Imagine these colorful delights gracing the table at a baby shower, adding a whimsical touch to a springtime brunch, or bringing extra joy to a kid’s birthday party. Their vibrant colors and delicious taste make them a perfect fit for any occasion that calls for a touch of sweetness and fun.
Choosing the Perfect Spring Cookie Cutters

For our festive collection of colorful Rice Krispie Treats, we used a delightful assortment of spring and Easter-themed cookie cutters: a playful bunny, a graceful butterfly, a charming tulip, and a sweet little duck. The beauty of this recipe is its flexibility – you can easily use any cookie cutters you already have on hand, or explore new shapes that spark your creativity!
When selecting your cookie cutters, consider a few important tips to ensure the best results. We recommend choosing cutters that are at least 2 inches tall or wide. This size allows for a substantial treat that is easy to handle and dip. Furthermore, opt for cookie cutters with simpler designs and fewer intricate edge details. Rice Krispie treat mixture, while malleable, can be a bit sticky. Simpler shapes make it much easier to press the mixture in and then cleanly release the formed treats without tearing or losing their defined edges. You can find excellent cookie cutters at most craft stores, baking supply shops, or even online retailers, offering an endless variety to suit any theme you desire.
The Foundation: Our Best-Ever Rice Krispie Treat Recipe

The secret to our incredibly delicious Chocolate Covered Rice Krispie Treats lies in our perfected base recipe. Over the years, we’ve fine-tuned our method to achieve Rice Krispie treats that are perfectly chewy, delightfully soft, and absolutely bursting with classic flavor. Forget dry or overly hard treats; this recipe guarantees a consistently amazing result every single time. While you can find a comprehensive guide to our original recipe, we’ll outline the essential steps here, especially as we’ll be making four separate batches for our vibrant colored treats.
For each individual color batch, you will need:
- 2 tablespoons (1/4 stick) of sweet cream, salted butter
- 2 cups of mini marshmallows
- 2 cups of Kellogg’s Rice Krispies Cereal
Here’s how to prepare the base mixture for one batch:
- **Melt the Butter:** In a large, non-stick saucepan, melt 2 tablespoons of butter over medium-low heat. Keep an eye on it to prevent burning.
- **Add Marshmallows:** Once the butter is fully melted, add 2 cups of mini marshmallows to the pan. Stir continuously with a wooden spoon or silicone spatula until the marshmallows are completely melted and smooth. This step is crucial for achieving a uniform and perfectly chewy texture.
- **Integrate Color (if desired):** If you are coloring your treats, this is the moment to add your food coloring. We’ll detail specific amounts for each color below, but remember to stir thoroughly until the marshmallow mixture reaches your desired shade.
- **Mix in Cereal:** Remove the pan from the heat. Quickly add 2 cups of Rice Krispies Cereal to the colored marshmallow mixture. Stir gently but quickly until all the cereal is evenly coated. Don’t overmix, as this can crush the cereal.
Once your mixture is ready, allow it to cool just enough so it’s comfortable to handle but still warm and malleable. This is key for easy molding into your chosen cookie cutter shapes. Since we are creating Yellow, Blue, Pink, and Purple treats, you will follow these steps to make four distinct batches, adding the appropriate food coloring for each. Now, let’s dive into making each colorful batch!
Crafting Yellow Rice Krispie Treats: Sunshine Ducks

Let’s bring some sunshine to our treats with vibrant yellow duckies! To make your yellow Rice Krispie treats, you will use the basic recipe outlined above for one batch. Begin by melting 2 tablespoons of butter in a large pan over medium-low heat. Once melted, add 2 cups of mini marshmallows and stir continuously until they are fully smooth and melted. This is the perfect moment to introduce your color! Add 2 drops of yellow Wilton Color Right Food Coloring to the melted marshmallow mixture. Stir diligently until the color is evenly distributed and you achieve a bright, cheerful shade of yellow.
Next, remove the pan from the heat and quickly fold in 2 cups of Rice Krispies Cereal, stirring until every flake is coated with the glorious yellow marshmallow mixture. Allow this mixture to cool slightly – it should be warm enough to be pliable but cool enough to handle comfortably. Now for the fun part: shaping! Lightly grease your hands and your chosen duck-shaped cookie cutter. Instead of pressing the mixture into a flat sheet and then cutting out shapes (which can result in rough edges), we prefer to mold the warm mixture directly into the cookie cutters. Press a small amount of the yellow Rice Krispie treat mixture firmly into the cutter, ensuring it fills all the nooks and crannies. Gently push the shaped treat out from the back of the cookie cutter onto a piece of parchment paper to cool. With this 2-cup batch and the size of our cookie cutters, we were able to create approximately 3 perfectly formed yellow ducky treats.
How to Make Blue Rice Krispie Treats: Hoppy Bunnies

Bring a touch of sky-blue charm to your Easter treats with these adorable blue Rice Krispie bunnies. The process mirrors that of our yellow duckies, ensuring consistent texture and deliciousness. For this batch, you will again use 2 tablespoons of butter, 2 cups of mini marshmallows, and 2 cups of Rice Krispies Cereal. Melt the butter first, then add the marshmallows, stirring until they are completely smooth and melted. The crucial step for coloring is to add 2 drops of Blue Wilton Color Right Food Coloring to the marshmallow mixture at this stage, BEFORE you incorporate the Rice Krispie Cereal.
Stir the blue food coloring into the melted marshmallows until a beautiful, even blue hue is achieved. Once the color is perfect, remove the pan from the heat and gently fold in the Rice Krispies Cereal, making sure every piece is coated. Allow the blue mixture to cool just enough to be safely handled, then lightly grease your hands and your bunny-shaped cookie cutter. Press the malleable blue Rice Krispie mixture firmly into the cookie cutter, creating a crisp, well-defined bunny shape. Carefully push the formed treat out onto a piece of parchment paper to set. Repeat until all the blue mixture is used, and admire your delightful blue bunnies!
How to Make Pink Rice Krispie Treats: Pretty Tulips

Add a touch of delicate charm with these lovely pink tulip Rice Krispie treats, perfect for any spring celebration. As with the previous colors, you’ll start with a fresh batch using 2 tablespoons of butter, 2 cups of mini marshmallows, and 2 cups of Rice Krispies Cereal. Melt the butter in a pan over medium-low heat, then add the mini marshmallows, stirring until they are completely melted into a smooth, gooey consistency. To achieve that perfect springtime pink, add 2 small drops of Pink Wilton Color Right Food Coloring to the melted marshmallow mixture. Ensure you stir thoroughly until the color is uniform and vibrant before moving on to the next step.
Once your marshmallow mixture is beautifully pink, remove the pan from the heat and fold in the Rice Krispies Cereal. Stir carefully until all the cereal is coated, creating a lovely pink base for your treats. Allow the mixture to cool slightly until it’s easy to handle without being too hot or too sticky. Lightly grease your hands and your tulip-shaped cookie cutter. Press the warm pink Rice Krispie mixture into the cutter, ensuring it fills the shape completely. Then, gently push the formed pink tulip treat out of the cookie cutter and place it on a piece of parchment paper to cool and firm up. Repeat this molding process until all your pink mixture has been transformed into charming tulip treats, ready for their white chocolate dip.
How to Make Purple Rice Krispie Treats: Fluttering Butterflies

Complete your rainbow of spring treats with enchanting purple butterfly Rice Krispie treats. This vibrant color is created by combining our pink and blue food colorings for a rich, deep purple hue. Start by preparing another single batch with 2 tablespoons of butter, 2 cups of mini marshmallows, and 2 cups of Rice Krispies Cereal. Melt the butter in your pan over medium-low heat, then add the marshmallows, stirring until they are fully melted and perfectly smooth. This is where the magic happens for the purple color!
To achieve a beautiful purple, add 4 drops of Pink Wilton Color Right Food Coloring and 2 drops of Blue Wilton Color Right Food Coloring to the melted marshmallow mixture. Stir the colors in thoroughly, combining them until you reach a consistent and captivating shade of purple. This custom mix creates a lovely, spring-appropriate hue. Once your marshmallow mixture is a glorious purple, remove the pan from the heat and quickly add the Rice Krispies Cereal, stirring gently until all the cereal is evenly coated. Allow the purple mixture to cool slightly to a manageable temperature, then lightly grease your hands and your butterfly-shaped cookie cutter. Press the warm, pliable purple Rice Krispie mixture firmly into the cutter to create perfectly formed butterfly shapes. Gently push each treat out of the cutter onto a piece of parchment paper to cool and set completely. Now you have a stunning collection of colorful spring treats, ready for their elegant white chocolate dip!
How to Dip Your Colorful Rice Krispie Treats in White Chocolate

Adding a luxurious white chocolate coating takes these springtime Rice Krispie treats to the next level, providing a delightful contrast in texture and flavor, and an elegant finish. Here’s a detailed guide to dipping your beautifully colored treats:
Step 1: Choose Your White Chocolate. For a smooth, consistent dip and delicious taste, we highly recommend using Ghirardelli White Melting Wafers. They melt beautifully and set perfectly, creating a professional-looking coating. Other high-quality white chocolate chips or candy melts can also work, but melting wafers often provide the easiest and best results for dipping due to their specific formulation.
Step 2: Master the Melt. Place about 25-30 white chocolate melting wafers into a microwave-safe bowl. Begin by microwaving them for 30 seconds. Remove the bowl and stir the chocolate thoroughly. Even if the wafers don’t look completely melted, the residual heat will continue to melt them as you stir. Return to the microwave for additional 10-second intervals, stirring well after each interval, until the chocolate is smooth and fully melted with no lumps. Be careful not to overheat, as white chocolate can seize. This amount of white chocolate is typically sufficient to coat the bottoms of about 7-8 average-sized Rice Krispie treats, but this can vary based on the size of your cookie cutters and desired chocolate thickness.
Step 3: The Art of Dipping. Once your white chocolate is perfectly melted and smooth, gently take one of your cooled spring-themed Rice Krispie treats. Lay the bottom of the treat into the bowl of melted white chocolate. Swish it around gently to ensure the entire bottom surface is coated, and perhaps let the chocolate climb up the sides a tiny bit for an appealing border. You can use a spoon to help guide the chocolate or tap the treat gently against the rim of the bowl to remove any excess.
Step 4: Set and Dry. Carefully lift the dipped Rice Krispie treat and place it on a piece of parchment paper, chocolate side up. The parchment paper prevents sticking and makes for easy cleanup. Allow the chocolate to set completely at room temperature or, if you’re in a hurry, you can place them in the refrigerator for 10-15 minutes until the chocolate is firm.

Step 5: The Double Dip (Optional, but Recommended!). If you’re a true white chocolate lover and desire a more substantial, decadent layer of chocolate, you can perform a second dip. Once the first layer of white chocolate is completely dry and firm, simply repeat Steps 3 and 4. This will create a thicker, more satisfying coating that perfectly complements the chewy Rice Krispie treat. You can also add sprinkles or other edible decorations immediately after the second dip, while the chocolate is still wet, for an extra festive touch!
Expert Tips & FAQs for Perfect Springtime Rice Krispie Treats
Achieving perfectly colored and dipped Rice Krispie treats is simple with a few insider tips. Here’s everything you need to know to make these spring delights flawless every time:
Food Coloring Wisdom:
We swear by Wilton Color Right Food Coloring for its ability to deliver incredibly vibrant and true colors without needing excessive amounts. This concentrated gel-based coloring system means fewer drops are needed, which is important as adding too much liquid can alter the texture of your treats. Another fantastic benefit is its versatility; with just a few base colors, you can mix and match to create any shade in the rainbow, offering endless possibilities for seasonal and holiday treats. Remember the golden rule: always add the food coloring to the melted marshmallow and butter mixture *before* you add the Rice Krispie cereal. This ensures even color distribution and prevents overworking the cereal. With these tips, bland beige treats are a thing of the past – welcome to a world of colorful confectionary!
Troubleshooting Common Issues:
- **Too Sticky?** If your treats are too sticky to handle, try lightly greasing your hands with butter or non-stick spray before pressing them into cookie cutters. The mixture should be warm, but not piping hot, for the best molding consistency.
- **Too Hard?** This usually happens if marshmallows are overcooked or the mixture is packed too tightly. Ensure you melt marshmallows over medium-low heat and stir gently. Also, when pressing into cookie cutters, use firm pressure but avoid compacting them excessively.
Storage Instructions & Make-Ahead Magic:
These colorful Rice Krispie treats are fantastic for making ahead, saving you time during busy holiday preparations. Allow them to cool completely and for the chocolate to fully set before storing. Store your Rice Krispie treats in an airtight container at room temperature for up to a week. For longer storage, they freeze beautifully! Place them in a single layer in an airtight freezer-safe container, separating layers with parchment paper to prevent sticking. They will last for up to 3-4 weeks in the freezer. Simply thaw at room temperature before serving for a fresh, delicious treat. These treats are robust enough to travel well, making them perfect for potlucks, parties, and gifting!
Creative Variations & Garnish Ideas:
While these treats are gorgeous as they are, feel free to get creative! After dipping in white chocolate, while the chocolate is still wet, you can add:
- **Sprinkles:** Colorful spring sprinkles, edible glitter, or nonpareils.
- **Drizzles:** Melt a small amount of dark chocolate or colored candy melts and drizzle over the white chocolate for an artistic touch.
- **Edible Flowers:** Small, edible sugar flowers can add an extra elegant touch.
- **Different Cereals:** Experiment with other puffed cereals for varied textures.
