Gather Your Ingredients: Essential Supplies for Brownie Cupcakes

Crafting these delectable brownie cupcakes is surprisingly straightforward, especially when you have all your ingredients ready. Our recipe cleverly uses box mixes to streamline the process, allowing you to achieve impressive results with minimal fuss. Here’s what you’ll need to create about 20 delightful cupcakes:

All the ingredients you will need to make Halloween Brownie Cupcakes including White Cake Mix, Brownie Mix, Eggs, Oil, Food Coloring and Halloween Sprinkles arranged on a white surface.

For the Brownie Layer:

  • 1 Box Brownie Mix: Choose your favorite brand! We highly recommend Ghirardelli Chocolate Supreme Brownie Mix for its rich flavor and inclusion of chocolate chips, which add an extra layer of decadence. Pillsbury Chocolate Fudge Brownie Mix is another excellent choice for a classic, moist brownie. Ensure you have the additional ingredients required by your chosen mix, typically eggs, oil, and water.

For the Cake Layer:

  • 1 Box White Cake Mix: A classic white cake mix provides a neutral canvas for coloring and a delightful contrast to the brownie. Pillsbury Moist Supreme White Cake mix is a fantastic option, offering a consistently moist and tender crumb. Again, have the necessary additions like eggs, oil, and water on hand as per the box instructions.
  • Orange Food Coloring: To achieve that quintessential Halloween glow. We prefer Wilton Color Right Food Coloring for its vibrant and consistent results, but any high-quality orange food coloring will work perfectly. Gel food coloring often provides a more intense color with less liquid, which is ideal for baking.

For Assembling & Decorating:

  • 20 Cupcake Liners: Standard-sized cupcake liners are perfect. You might consider foil liners or heavier-duty paper liners to reduce the chance of sticking, although regular liners work fine with proper cooling.
  • 1 Batch of Our Best Buttercream Frosting: This creamy, luscious frosting is the perfect crowning glory for your cupcakes. You can find our detailed recipe and instructions for making it here.
  • Halloween DIY Sprinkles: Add a festive touch with orange and black sprinkles! Making your own DIY sprinkles is easier than you think and allows for custom color combinations. Of course, store-bought Halloween sprinkles work wonderfully too.

Essential Baking Equipment:

  • Muffin Tin: A standard 12-cup muffin tin is necessary. You’ll likely need to bake in two batches to accommodate 20 cupcakes.
  • Mixing Bowls: Two separate bowls for the brownie and cake batters.
  • Whisk or Electric Mixer: For preparing the batters according to package directions.
  • Spatula or Spoon: For mixing and transferring batter.
  • Measuring Cups and Spoons: For precise ingredient measurements.
  • Piping Bag and Decorating Tip (Optional): A Wilton 2D Decorating Tip is excellent for creating a beautiful swirl, but a knife or offset spatula can also be used to spread the frosting.

Crafting Your Two-Layered Delights: Step-by-Step Instructions

Creating these impressive Brownie Cupcakes is a fun and rewarding process. Follow these detailed steps to ensure perfectly baked, delicious treats every time. The key to their unique texture lies in the careful layering of the two batters.

Step 1: Prepare Your Batters. Begin by preparing the brownie batter. Follow the instructions precisely on your chosen box of brownie mix. We typically opt for Ghirardelli Chocolate Supreme Brownie Mix because we love the added chocolate chips, which enhance the fudgy texture and rich flavor. However, feel free to use your favorite brand; just ensure you have all the necessary accompanying ingredients like eggs, oil, and water as specified. In a separate bowl, prepare your white cake mix according to the package directions. Once the cake batter is smooth and lump-free, it’s time to add the color! Incorporate orange food coloring until you achieve a bright, vibrant hue that screams Halloween. For the most intense and brightest orange color, we highly recommend using cake mix directions that call for “egg whites only,” as this prevents any yellowing from egg yolks that could dull your desired shade.

Baking Instructions: Layering and Achieving Perfection

The secret to these unique two-layered cupcakes lies in the precise ratio and careful layering of the brownie and cake batters. This section will guide you through filling your cupcake liners and baking them to perfection.

Steps 2-3: Layering the Brownie Base. The most crucial aspect of making these Brownie Cupcakes is getting the correct ratio of cake batter to brownie mix. Start by carefully adding a spoonful of brownie mix to the bottom of each cupcake liner. The brownie batter should fill approximately 1/3 of the way up the liner. It’s important to remember that you want slightly more cake batter than brownie batter in the final cupcake, so don’t be tempted to add too much brownie base at this stage. A good rule of thumb is to ensure the brownie layer forms a solid, yet relatively thin, foundation.

Steps 4-5: Adding the Vibrant Cake Layer. Once your brownie bases are in place, gently spoon the orange cake batter over the brownie layer. Continue filling the cupcake liners until they are about 3/4 full. This measurement is critical; if you add too much cake batter, the cupcakes will inevitably overflow over the edges of the cupcake liner as they bake, leading to a messy outcome and potentially uneven baking. Aim for a consistent level across all cupcakes for the best results.

Step 6: Baking and Cooling. With your liners filled, it’s time to bake! Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Bake the cupcakes for approximately 15-20 minutes. Baking times can vary slightly depending on your oven, so keep an eye on them. You’ll know they are fully baked when the dome of the cupcake springs back to the touch, and a toothpick inserted into the center comes out clean. Once baked, carefully remove the muffin tin from the oven and allow the cupcakes to cool in the tin for a few minutes before transferring them to a wire rack to cool completely. Allowing them to cool entirely is crucial before frosting, as warm cupcakes will melt your beautiful buttercream.

The Grand Finale: Frosting and Decorating Your Cupcakes

Once your delightful brownie cupcakes have cooled completely, it’s time for the most enjoyable part – frosting and decorating! This is where you can truly let your creativity shine and transform them into festive Halloween masterpieces.

Step 7: Prepare the Best Buttercream Frosting. The foundation of any great frosted cupcake is, of course, the frosting! We highly recommend making a batch of our Best Buttercream Frosting to top your Brownie Cupcakes. This recipe is not only incredibly easy to follow but also yields a smooth, rich, and delicious frosting that holds its shape beautifully for piping. You will find the full recipe and detailed instructions on how to make it here. Ensure your buttercream is light, fluffy, and at the right consistency for piping – not too stiff, not too runny.

Step 8: Master the Swirl. To achieve that classic, elegant cupcake swirl, we used a pastry bag fitted with a Wilton 2D Decorating Tip. This tip creates a lovely open star pattern that looks professional and appealing. Fill your pastry bag with the prepared buttercream. Holding the bag vertically over the center of the cupcake, start piping from the outside edge, moving in a continuous spiral towards the center, then pull up to create a peak. If you don’t have a pastry bag and tip, don’t worry! You can simply use a knife or an offset spatula to spread the frosting evenly over the top of each cupcake. The result will still be wonderfully delicious!

Step 9: Add Festive Halloween Sprinkles. No Halloween cupcake is complete without a generous dusting of festive sprinkles! We topped our Brownie Cupcakes with some vibrant Orange and Black DIY Sprinkles. Making your own sprinkles is surprisingly easy and allows you to customize colors and shapes for any occasion. We’ve found it so simple and fun that we now make our own sprinkles for almost everything! You can find our detailed instructions on how to make them here. Of course, store-bought Halloween-themed sprinkles featuring ghosts, bats, or pumpkins would also be absolutely adorable!

Expert Tips for Brownie Cupcake Success & Troubleshooting

Even the most straightforward recipes can benefit from a few expert tips to ensure perfect results every time. Here’s a collection of insights and answers to common questions that will help you master these delightful Brownie Cupcakes.

Troubleshooting Cupcake Liner Removal:

We’ve had a couple of comments from our readers mentioning difficulties in removing the cupcake liner from the brownie portion of the cupcake. While we haven’t experienced this issue ourselves, we understand it can be frustrating. We even conducted some tests for our family Halloween party, trying various types of cupcake liners (thin inexpensive ones, foil liners, heavier cupcake liners), and consistently had no problems. However, here are some crucial tips to help ensure smooth liner removal:

  • Ensure Complete Cooling: This is arguably the most critical step. Brownies, especially, can be quite sticky when warm. Make absolutely sure the cupcakes are completely cool, preferably for several hours or even overnight, before attempting to remove the liner. Rushing this step is the most common cause of sticking.
  • Don’t Remove Until Serving: For optimal freshness and to prevent the cake from drying out, it’s best not to remove the liner until just before you are ready to serve the Brownie Cupcakes. The liner helps to seal in moisture.
  • Proper Removal Technique: As shown in the picture above, there’s a gentle art to removing the liners. First, carefully pull down the sides of the cupcake liner, but leave the flat bottom portion attached. Once the sides are flattened, gently roll the liner off the bottom of the cupcake while holding the cupcake steady with your other hand. This rolling motion helps to ease the liner away from the brownie base without tearing.
  • Consider Liner Type: While we haven’t encountered issues with various liners, some bakers swear by foil liners or tulip-style parchment liners for sticky bottoms. If you frequently have issues, these might be worth trying.

General Baking Tips:

  • Accurate Measurements: Baking is a science! Always measure your ingredients precisely, especially when using box mixes that rely on specific ratios.
  • Don’t Overmix: When preparing both the brownie and cake batters, mix only until the ingredients are just combined. Overmixing can lead to tough, dry cupcakes.
  • Even Filling: Use an ice cream scoop or a measuring cup to ensure each cupcake liner receives a consistent amount of batter. This promotes even baking and uniform cupcake sizes.
  • Oven Calibration: Ovens can vary. If your cupcakes are consistently under or overbaked, consider getting an oven thermometer to check if your oven’s temperature is accurate.
What cake mix did you use?

We like Pillsbury Moist Supreme White Cake mix for its consistent quality and delightful texture, but any brand of white cake mix will yield great results. Just be sure to follow the package instructions meticulously, especially if opting for an “egg whites only” preparation for brighter orange color.

What Brownie mix did you use?

For these Brownie Cupcakes, we often use Ghirardelli Chocolate Supreme Brownie Mix because we love the added chocolate chips and rich flavor. Pillsbury Chocolate Fudge Brownie Mix is another fantastic option for a classic, fudgy brownie base. Depending on how many cupcakes you plan to make, a regular-sized box of brownies should be sufficient, helping you avoid leftover brownie batter.

What food coloring did you use?

To achieve the most vibrant orange, we recommend Wilton Color Right Food Coloring. Its concentrated gel formula provides intense color without altering the batter consistency too much. However, any high-quality orange food coloring will work effectively to give your cake layer that festive Halloween hue.

How many cupcakes does this recipe make?

This recipe typically yields about 20 standard-sized Brownie Cupcakes, making it perfect for parties or larger gatherings. You may need to bake in two batches if you only have one 12-cup muffin tin.

Can I make these ahead of time?

Absolutely! These cupcakes are great for making ahead. You can bake the cupcakes a day or two in advance, let them cool completely, and store them in an airtight container at room temperature. Frost them on the day of your event for the freshest look and taste.
