How to Prepare Your Marshmallow Base

Before diving into the delicious chocolate, it’s essential to set up your marshmallow foundation correctly. This initial step ensures your marshmallow pops are stable, look uniform, and are ready for their sweet transformation.
- Step 1: Sort Your Marshmallows for Uniformity. Begin by preparing your marshmallows. Just like snowflakes, no two marshmallows are exactly alike, and for the best presentation, you’ll want to group similar-sized ones together. We recommend sorting through your bag of regular-sized marshmallows and matching them into sets of three. This creates a visually appealing and consistently sized pop.
- Step 2: Place the First Marshmallow on the Stick. Carefully take one lollipop stick and gently push the first marshmallow onto it. Ensure it slides on smoothly without tearing.
- Step 3: Add and Adjust the Second Marshmallow. Next, add the second marshmallow onto the same stick. Once both are on, take a moment to adjust them, pushing them down firmly but gently so they are snugly together and centered on the stick.
- Step 4: Secure the Third Marshmallow, Mindful of the Tip. Finally, add the third marshmallow. This step requires a bit more care: only press the marshmallow halfway down onto the stick. It’s crucial that the stick does not poke through the top of the third marshmallow. If the stick protrudes, it can cause the marshmallow to dry out and harden, compromising the soft texture of your treat. This technique ensures a smooth, rounded top perfect for dipping.
Mastering the Art of Melting Chocolate

The quality of your melted chocolate is paramount to achieving beautifully coated marshmallow pops. Follow these steps to ensure a silky-smooth, perfectly tempered chocolate for dipping.
- Step 5: Measure and Prepare Your Chocolate. Place 1/2 cup of chocolate melting wafers onto a microwave-safe dish or a sturdy paper plate. This specific amount is ideal for covering approximately four marshmallow pops. Working with smaller batches prevents the chocolate from hardening too quickly, ensuring a consistently smooth coating for all your treats. While chocolate chips can be used, melting wafers generally provide a smoother, thinner consistency, making dipping easier and resulting in a more professional finish.
- Step 6: Initial Microwave and Stir. Microwave the chocolate for 30 seconds. After this initial burst, remove it, check its consistency, and give it a good stir. Even if it doesn’t look fully melted, stirring helps to distribute the heat evenly and prevents scorching.
- Step 7: Continue Melting in Short Intervals. Return the chocolate to the microwave and continue heating it in 10-second intervals. It’s crucial to alternate between heating and stirring after each interval. Chocolate retains heat, so even if it looks like there are still some solid pieces, stirring will often melt them completely. This gradual approach is key to preventing the chocolate from seizing or burning, which can ruin its texture and flavor.
- Step 8: Achieve a Perfectly Smooth Consistency. Once the chocolate is almost entirely melted, with only a few tiny lumps remaining, give it a final, vigorous stir. This last stir should incorporate any remaining solid bits, resulting in a completely smooth, glossy, and lump-free melted chocolate. Your chocolate is now ready for dipping!
Expert Techniques for Chocolate-Dipped Marshmallow Pops

Dipping your marshmallow pops in chocolate is where the magic truly begins. Follow these detailed steps to ensure a beautiful, even coating every time.
- Step 9: Gently Roll for Full Coverage. Hold a marshmallow pop by its stick and gently roll the marshmallows in the melted chocolate. Ensure the entire surface is covered. The goal is an even, generous coating that completely envelops the marshmallows.
- Step 10: Utilize a Spoon for Assistance. If you find it challenging to roll the marshmallows evenly, or if the chocolate is a bit thicker, keep a spoon handy. You can use the spoon to drizzle the melted chocolate over the marshmallows, helping to fill in any gaps and smooth out the coating for a perfect finish. This method offers greater control and helps achieve a flawless surface.
- Step 11: Don’t Forget the Top! It’s easy to overlook, but ensure the very top of the uppermost marshmallow is also dipped and coated in chocolate. A fully covered marshmallow pop looks more professional and prevents any part of the marshmallow from drying out.
- Step 12: Remove Excess Chocolate and Prepare for Drying. Once the marshmallow pop is completely covered, lightly tap the stick against the edge of your plate. This gentle tapping motion helps to remove any excess chocolate, preventing drips and ensuring a clean, smooth coat. Give it a final visual check to confirm full coverage. Then, carefully place the chocolate-covered marshmallow pop onto a piece of parchment paper. This method will result in a slightly “flat side” where the pop rests. If you desire a perfectly rounded finish on all sides, you’ll need to let them dry standing upright. For this, insert the sticks into a styrofoam block or a custom-made drying rack, allowing air to circulate evenly around all surfaces as the chocolate sets.
Adding Festive Flair: Decorating Your Valentine’s Marshmallow Pops

Now for the fun part – transforming your chocolate-covered marshmallow pops into festive Valentine’s masterpieces! Candy melts are your best friend for adding vibrant colors and intricate designs.
- Step 13: Gather Your Candy Melts. Candy melts are specially formulated confectionery coatings that melt smoothly and set firmly, making them perfect for decorating. You can easily find them in the cake decorating sections of most craft supply stores, online retailers like Amazon, and major supermarkets like Walmart. For our Valentine’s theme, we used a delightful palette of Red, White, Light Pink, and Dark Pink candy melts to create a romantic and playful look.
- Step 14: Melt Candy Melts in Small Batches. While your chocolate-covered marshmallow pops are setting and drying, prepare your candy melt colors. Place 15-20 individual candy melts of each desired color into separate small Ziploc bags. Microwave each bag in 20-second intervals. After each interval, remove the bag and gently massage the candy melts to ensure even melting and prevent scorching. Continue microwaving and massaging until the candy melt mixture is completely smooth and liquid, with no lumps remaining. Using Ziploc bags simplifies the process and makes for easy cleanup, while also allowing you to control the drizzle precisely.

- Step 15: Begin Drizzling with Your First Color. Once your candy melts are perfectly melted and smooth, carefully snip a very tiny tip off one corner of the Ziploc bag. A small opening is key to achieving a fine, controlled drizzle. Begin by artfully drizzling the first color of candy melt over your chocolate-covered marshmallow pop. You can create straight lines, zigzags, or abstract patterns – let your creativity guide you!
- Step 16: Alternate Colors for a Multi-Dimensional Look. Continue the decorating process by alternating colors. Snip the corner of another Ziploc bag and drizzle a second color over the pop, overlapping or creating new patterns. Repeat with all your chosen colors (Red, Bright Pink, Pink, and White work wonderfully for Valentine’s). This layering of colors creates a beautiful, dynamic, and festive appearance for your Valentine’s Marshmallow Pops.
- Step 17: (Original Step 17 was a repetition of colors, removed for brevity)
- Step 18: Allow to Harden Completely. After decorating, set the marshmallow pops aside. It’s essential to allow them to harden completely before handling or serving. This ensures the candy melt drizzles are firm and won’t smudge, preserving the beautiful design. Depending on your room temperature, this could take 15-30 minutes, or you can speed up the process by placing them in the refrigerator for 10-15 minutes.
Expert Tips & Frequently Asked Questions
Making these delightful Valentine’s Marshmallow Pops is straightforward, but a few expert tips can ensure your treats turn out perfectly every time. Here are answers to common questions and additional advice for success:
What type of chocolate should I use for dipping?
We’ve experimented with both melting chocolate wafers and standard chocolate chips for coating marshmallows. Our findings consistently show that melting chocolate wafers are significantly easier to work with. They melt down to a thinner, more fluid consistency, which makes covering the marshmallows smoother and more efficient, resulting in a perfectly even and elegant coat. Chocolate chips, while delicious, tend to melt into a slightly thicker, sometimes clumpy consistency, leading to a much thicker chocolate coating. From a taste perspective, both options are undeniably delicious, so the choice ultimately depends on the desired finish and ease of application. If using chocolate chips, adding a teaspoon of coconut oil or vegetable shortening can help thin out the consistency for smoother dipping.
How many marshmallow pops can I make at one time?
For the best results and ease of handling, it’s highly recommended to work with 1/2 cup of chocolate melting wafers at a time. Chocolate, once melted, will begin to cool and harden relatively quickly, especially when exposed to room temperature. If you melt too much chocolate at once, it can become too thick and difficult to work with before you’ve had a chance to dip all your marshmallows. Preparing in smaller batches ensures your chocolate remains at an optimal, smooth consistency throughout the dipping process. You can always melt more chocolate as needed.
How can I achieve the best chocolate drizzle for decoration?
The secret to a beautifully fine and controlled drizzle lies in how you prepare your candy melt bag. When decorating your marshmallow pops, make sure to cut only the very, very tip off the plastic bag. You want to create an extremely small hole. This tiny opening gives you maximum control over the flow of the candy melt, allowing you to create delicate, intricate lines and patterns without heavy, messy streaks. Practice on a piece of parchment paper first to get a feel for the pressure and speed needed for your desired drizzle effect.
How should I store leftover marshmallow pops, and what’s their shelf life?
Marshmallow Pops are surprisingly durable and will maintain their freshness for a couple of weeks when stored properly. To keep them at their best, place them in an airtight container at room temperature. There’s absolutely no need to store them in the refrigerator; in fact, refrigeration can cause the chocolate coating to “bloom,” leading to a dull, discolored appearance (a harmless but aesthetically unpleasing white film). Storing them in a cool, dry place ensures the chocolate remains glossy and the marshmallows stay delightfully soft.
Can I make these marshmallow pops in advance?
Absolutely! These treats are perfect for making ahead. You can prepare them up to a week in advance, storing them in an airtight container at room temperature. This makes them ideal for party preparations or gifting.
What if my chocolate becomes too thick while dipping?
If your melted chocolate starts to thicken during the dipping process, you can gently reheat it. Pop it back into the microwave for 5-10 seconds, stir well, and it should regain its smooth consistency. Avoid overheating, which can cause it to seize.
Can I use different toppings?
Yes, definitely! While candy melt drizzles are classic, feel free to experiment with other Valentine’s themed toppings. Sprinkles (heart-shaped, red, pink, white), edible glitter, finely chopped nuts, or even crushed freeze-dried raspberries can add extra texture and flavor before the chocolate sets. Apply these immediately after dipping, while the chocolate is still wet.

Who wouldn’t love marshmallows on a stick covered with chocolate and decorated with Red, Pink and White candy melts? These Valentine’s Marshmallow Pops are both tasty and adorable.
Ingredients
- 24 Marshmallows (Regular Size)
- 1 cup Ghirardelli Chocolate Melting Wafers or Chocolate Chips
- 8 Lollipop Sticks
- 20 Red Candy Melts
- 20 Bright White Candy Melts
- 20 Bright Pink Candy Melts
- 20 Pink Candy Melts
Instructions
- Prepare the marshmallows before melting the chocolate. Marshmallows are like snowflakes … no two are the same, so you want to make sure you have like ones together. We sort through the bag of marshmallows and match them up in sets of threes.
- Place the first marshmallow on the lollipop stick.
- Add the second marshmallow, and adjust them on the lollipop stick.
- Add the third marshmallow but only press the marshmallow halfway down onto the stick. You do not want the stick to come out the top of the third marshmallow or the marshmallow will dry out.
- Place the 1/2 cup of melting wafters on a microwave-safe dish or paper plate. (This amount of chocolate should be enough to cover four Marshmallow Pops.)
- Microwave the chocolate for 30 seconds, check it, and give it a stir.
- Continue to microwave the chocolate, 10 seconds at a time, Alternating between heating and stirring.
- Once the chocolate is almost completely melted, give it a final stir to make sure it is completely smooth.
- Roll the marshmallows on the stick in the melted chocolate.
- If you have problems rolling the marshmallows in the chocolate, have a spoon handy and you can spoon the chocolate over the marshmallows and smooth out the chocolate on the marshmallows.
- Don’t forget to dip the top of the marshmallow into chocolate.
- Once the marshmallow pop is completely covered with chocolate, lightly tap the stick on the edge of the plate to get the excess chocolate off. Give it a once over to make sure it is all covered and place it on a piece of parchment paper. This will leave a “flat side” on the marshmallow, so if you want it rounded on all sides you will have to let them dry standing up and for that, you will need a form brick to put the sticks into.
- You can use candy melts to decorate the Marshmallow Pops.
- While the chocolate on the marshmallow pops is drying, melt 15-20 each of different colored candy melts in individual Ziploc bags in the microwave. Microwave them in 20-second intervals, massage the baggies to make sure the candy melt mixture is melting, and then microwave again if needed.
- Once melted, cut the tip off the bag and drizzle the first color of candy melt over the marshmallow pop.
- Alternating colors, drizzle the rest of the melted candy over the Valentine’s Marshmallow Pops.
- Allow the marshmallow pops to harden completely before serving.
Notes
We have tried both melting chocolate and chocolate chips to coat the marshmallows and found the melting chocolate much easier to use. It melted into a thinner consistency so covering the marshmallows was easier. The chocolate chips were a little clumpy and made a much thicker coating of chocolate. As for taste, there was no difference. They were both delicious.
Candy melts can be found in the Cake Decorating section in most Craft Supply stores, Amazon, and Walmart. We used Red, White, Light Pink, and Dark Pink.
It is best to work with 1/2 cup of chocolate melting wafers at a time otherwise the melted chocolate will start to harden and it is too hard to cover the marshmallows.
Marshmallow Pops will last for a couple of weeks if you store them in an airtight container. And there is no need to keep them in the refrigerator, in fact, the chocolate might discolor if you do store them in the refrigerator.
